Suntory Hakushu Distillery

Suntory Hakushu Distillery was established in 1973 as a second malt whisky distillery as a result of continuous research to find the best quality water for whisky preparation, seeking a different type of malt whisky raw material from the Yamazaki distillery.
The natural underground water from the Southern Alps is a crisp, soft water with just the right amount of minerals, and the whisky made with this water has a light and gentle taste, different in type from the heavy and floral Yamazaki whisky, making it possible to produce a more diverse and profound whisky than ever before.
In the fermentation process, we stick to wooden fermentation vats with excellent heat retention properties, and the action of micro-organisms such as lactic acid bacteria produces the unique flavour unique to Hakushu.
In the distillation process, distillation kettles of different sizes and shapes are used, and in the storage (maturing) process, various types of casks are used, and a wide variety of sake is produced in all processes from preparation, fermentation and distillation to storage (maturing).
