Suntory Hakushu Distillery was established in 1973 as a second malt whisky distillery as a result of continuous research to find the best quality water for whisky preparation, seeking a different type of malt whisky raw material from the Yamazaki distillery.
The natural underground water from the Southern Alps is a crisp, soft water with just the right amount of minerals, and the whisky made with this water has a light and gentle taste, different in type from the heavy and floral Yamazaki whisky, making it possible to produce a more diverse and profound whisky than ever before.
In the fermentation process, we stick to wooden fermentation vats with excellent heat retention properties, and the action of micro-organisms such as lactic acid bacteria produces the unique flavour unique to Hakushu.
