    Minami Alps /Nirasaki

    The name 'Taikan' is derived from 'taikan', a crown worn by a military officer who has risen in the world to celebrate his future.
    The brewery was founded in Kofu City in 1877 (Meiji 10) with a history of more than 140 years, but in 2007 (Heisei 19) it moved to Minami Alps City in search of an environment suitable for sake brewing.
    It has a refreshing taste and crisp aftertaste, and the head of the brewery says: ‘After all, sake is basically a food sake. Nowadays there are various types of sake, such as highly aromatic sake, but in our case it's a sake that doesn't interfere with the meal and is enjoyable to drink. It's not too strong, but rather dry and refreshing. It's the type of sake that you don't get tired of drinking.
    The secret of the umami lies in the painstaking brewing process: the Yamada-Nishiki rice is polished to 40%, only the centre of the rice, which is considered the ‘diamond of rice’, is used, the rice is washed by hand gently in small containers of 10 kg each, and the water absorption time is measured to the second.     The brewery also produces a new type of sake using 'wine yeast', and by blending the juice of Yamanashi's 'Shine Muscat' fruit with the luxury of Junmai sake, a fruity sake is created that matches the fresh aroma, acidity and sweetness of the fruit.
